EVANS & TATE CLASSIC CABERNET MERLOT, the grapes were sourced from our vineyards in northern and central Margaret River from sites ideally suited to growing these two varieties. Fermentation in static fermenters followed picking in the cool of the morning to ensure a slow, steady onset to fermentation. The Merlot portion was cold-soaked for five days, which was followed by an early pressing to ensure a softly structured wine at blending. The wine matured in well seasoned old oak barriques and hogsheads for seven months before bottling.
